Coola M. Dimas, 98, fell asleep in the arms of the Lord on June 24, 2026.
She was born on June 9, 1928, in Joliet, Illinois, to Gus and Mary Theopulos. Coola spent her childhood in Joliet, Illinois, and later in Berkeley, California, with her beloved cousins, and life-long friends. Following the untimely death of her mother, she helped her father run his grocery store. She was very proud of working, hand-in-hand, with the contractor, to build a house in the Berkeley hills. There, in 1957, she married Dean Dimas and they had 3 children together.
She, alongside her husband, Rev. Constantine T. Dimas, faithfully served Greek Orthodox parishes across the country: Colorado, Illinois, Wyoming, Texas. Ultimately, they settled and retired in Kechi, Kansas, with the St. George Antiochian Orthodox Church in Wichita. Coola remained a devoted member of the St. George community, truly appreciating the fellowship she had found there.
Coola loved being employed and interacting with people on the job. She worked well into her 80s, avoiding retirement as long as possible. In Wichita, she worked at McDonald’s and then spent many years at Cero’s, packaging, delivering and selling candy as well as training new employees.
Coola was very proud of their house in Kechi, KS. Her all-time love was gardening, planting her flowers, new trees and bushes.
Coola was always a care-giver to her immediate family. She loved telling stories, especially to make those around her laugh. And, she never hesitated to deliver truth bombs. Her laughter lives on in our memories and she will be deeply missed by all who knew her.
She was preceded in death by her parents and by her beloved husband, Constantine.
Coola is survived by her brother, Andrew Theopulos; her children Cathy (Angelo) Boulieris, Ted (Vicki) Dimas, and Styke (Tina) Dimas; her grandchildren, Niko (Kim) Boulieris, Dena (Justin) Hoffman, Alex Dimas, Adam Dimas, and Anne Elise (Alex Horton) Dimas; and her great‑grandchildren Mila and Talos Hoffman, all of whom brought her immense joy.
